Michael Pollan's 2006 book The Omnivore's Dilemma was a massive conversation-starter that was very good at making readers feel uncomfortable about what they eat and why, becoming a holy text for the organic and slow-food movements. In Cooked: A Natural History of Transformation, Pollan learns how to prepare different dishes using the classical elements of water, earth, air and fire—the last of which he explores by talking to a pit-barbecue master in Ayden, N.C. Clearly, the man has good taste.
