closed its Foster Street bakery and cafe the summer of 2015. But owner and pastry chef Tanya Matta recently announced a new plan on her Facebook page: setting up shop in a shipping container.
In the meantime, Matta has quietly made a downtown comeback with a bit of her pastry repertoire for sale at Unscripted Hotel’s allday Cafe. Depending on the day, you’ll find her ham and cheese biscuits, ginger scones, dulce de leche napoleons, raspberry almond bars, and, my favorite, pumpkin bread pudding.
Cramped quarters aren’t a challenge for Matta. DaisyCakes first traipsed the city in a 1978 Airstream trailer in 2010, one of the early food trucks to hit the scene.
“Space-wise, it’s not much different than a food truck,” Matta says of the container model. “I’ve been wanting to do something a little different. And I don’t want to be mobile. Having a set location is important to me.”
She points to models in Canada and Europe where people open businesses and even live in shipping containers. It’s a compact method to reduce your footprint in a big way, she says. Matta is currently negotiating the mechanics and legalities of a shipping container shop with the city of Durham.
“For Durham, being such a forward-thinking city, it’s great model for other businesses,” she says.
Unscripted Hotel plans to host a DaisyCakes tasting event in the near future. For now, your best bet is picking up a morning pastry and coffee at the cafe.
Unscripted has cancelled any upcoming tasting events. But DaisyCakes pastries are still available every day at allday cafe.
