Stephanie Smith's Portable Tofu Smoothie

1/4 cup Nasoya silken tofu
4 tablespoons So Delicious coconut yogurt
1/2 cup soft fruit pureed (mango, papaya or banana works well)

Place all of the ingredients in a mini food chopper and blend it for about 15-25 seconds until it is well blended and smooth, but a firm pudding consistency. It will look separated at first but give it a couple more pulses until everything is all one color. The end result is the consistency of a firm pudding and travels very well. You can also blend the fruit a bit before blending it all together.
