Chicken Kebabs

  • 2 lbs. boneless, skinless chicken breasts,
    cut into cubes
  • 3 tbsp. olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tbsp. oregano
  • salt to taste
  • 1 green bell pepper, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 onion cut into chunks
  • wooden skewers, soaked in water

Marinade chicken in the olive oil, garlic, lemon juice, oregano and salt for at least an hour. Then skewer, alternating between chicken, peppers and onion. Rotate on grill until chicken is done. Makes between 10-12 kebabs.
